Negrils Mango Bread

Ingredients:

  • 1 cup butter
  • 11/2 cups sugar
  • 4 eggs
  • 1/2 tsp salt
  • 2 tsps baking soda
  • 4 cups flour
  • 11/2 cups diced mango
  • 2 tbsp lemon juice

Directions:

  1. Cream together butter and sugar.
  2. Add eggs, stir in dry ingredients, mangoes and lemon juice.
  3. Pour into two 8-inch loaf pans.
  4. Bake 350F for 1 hour until loaf tests done.
  5. Cool in pans for 15 minutes. Remove from pans and cool thoroughly.
