My Marinated  Roasted Red Peppers

Ingredients:

  • 12 freshly roasted red bell peppers in a broiler or on a grill broiler
  • 3 cloves of garlic sliced
  • 2 tlsp of fresh basil chopped
  • 1 tlsp of fresh tarragon chopped
  • 1 tlsp of capers
  • salt and pepper to taste
  • 3 tlsp of extra virgin olive oil

Directions:

  1. After roasting the peppers seal them all in foil wrap for about 20 min’s ( makes it easier to peel ) Peel and seed the roasted peppers ,peel into inch wide strips , when finish drain 3/4 of the juice out of bowl – and add all of the other ingredients mix well – and let marinate for a few hours – serve at room temp- ( you can also use yellow or orange bell peppers or a mixture of all )
