Mushroom Soup With Chive Cream

Ingredients:

Directions:

  1. Heat olive oil in saucepan over medium heat.
  2. Add carrots, celery, onion, salt and pepper and cook 10 minutes.
  3. Peel and slice potatoes and add to the pot.
  4. Add bay leaf, thyme and stock and bring to a boil quickly over high heat.
  5. Lower heat and simmer 15 minutes.
  6. Add mushrooms and simmer 7 minutes.
  7. Blend chives and sour cream together and set aside.
  8. Remove bay leaf and puree soup in a blender.
  9. Strain then serve soup in bowls with a dollop of chive cream.
