Ingredients:

  • 1 quart tomato
  • 1/2-1 bunch celery
  • 1 (5 3/4 oz) bottle stuffed olives, drained
  • 3 tbsp vinegar
  • 1 tbsp grated onion
  • 1 tbsp salt
  • 1/8 tbsp cayenne pepper
  • 2 (1/4 oz) envelopes of knox unflavored gelatin
  • 1/2 cup cold water

Directions:

  1. Mash tomatoes into a pulp, removing any stem pieces.
  2. Cut celery thin.
  3. Add all seasonings.
  4. Put the gelatin in the water for 10 minutes and then heat it over boiling water until it is completely dissolved.
  5. Add to the tomato mixture and turn into a large mold or into individual molds.
  6. Rinse the mold with cold water prior to pouring the mixture in - this helps it to unmold easily.
  7. Pour in and refrigerate overnight.
  8. Unmold.
  9. Slice if desired.
  10. Serve on lettuce leaves with a side of mayonnaise.
  11. Asparagus spears or any fresh vegetable is a nice garnish on the side.
