Ingredients:

Directions:

  1. You can use a combination of ground meats.
  2. I like a combination of beef, pork and veal.
  3. Combine ground meats, bread crumbs, egg, onions, salt and oregano with 1/2 cup ketchup in a bowl.
  4. Mixing well.
  5. Pat meat mixture flat onto a 9 X 13 piece of waxed paper.
  6. Sprinkle the meat with cheese, mushrooms, bacon, and parsley.
  7. Roll, as for a jelly roll, using the waxed paper to help you start to roll.
  8. Sealing edge and ends.
  9. Rolling the meat is a little tricky, but if there is a break in the meat just smooth over with your fingers.
  10. It will still taste great.
  11. With a little practice you will be a pro.
  12. Use the waxed paper to transfer the meat loaf to a 9 X 13 pan.
  13. Place seam side down.
  14. Bake at 375 degrees for 30 minutes.
  15. Pour off drippings.
  16. Spoon remaining ketchup over loaf.
  17. At this time I like to garnish the meat loaf with sliced black olives, or onion slices and a sprinkling of parsley.
  18. Or you can place bell pepper slices on the meat.
  19. Bake for 30 minutes longer.
  20. Let cool for a few minutes before slicing.
  21. *Ifyou want a really Italian tasting meat loaf use spaghetti sauce.
