Mom's Pepparkakor (Gingerbread Cookies)

Ingredients:

  • 1 cup shortening
  • 1 cup sugar
  • 1 cup molasses
  • 1 egg
  • 2 tbsp vinegar
  • 5 cups flour
  • 3 tsp grated gingerroot
  • 1 1/2 tsp baking soda
  • 1 tsp ground cloves
  • 1/2 tsp salt
  • 1/2 cup shortening
  • 1 tsp vanilla
  • 4 tbsp milk

Directions:

  1. Cream shortening and sugar.
  2. Beat in molasses, egg and vinegar.
  3. Stir flour with ginger, soda, cinnamon, cloves and salt.
  4. Blend into batter.
  5. Chill for 3 hours.
  6. On lightly floured surface, roll dough to at least 0.125 inch thickness.
  7. Cut into desired shapes with cookie cutter.
  8. Place one inch apart on greased cookie sheet.
  9. Bake at 375° for 5-6 minutes. Cool slightly; remove cookies to rack and cool.
  10. Mix shortening, vanilla, powdered sugar and milk.
  11. Drizzle over cookies.
