Ingredients:

Directions:

  1. Combine sugar, vegetable oil, and eggs.
  2. Add the applesauce or pineapple.
  3. Sift together flour with cinnamon, salt, soda, and nutmeg or allspice.
  4. Add flour mixture to first mixture.
  5. Add grated carrots.
  6. Add nuts, raisins, or candied fruit, if using.
  7. Bake in tube pan at 350 degrees for 1 1/4 hours.
  8. It is recommended that you do not double this recipe.
