Ingredients:

Directions:

  1. Put first six ingredients in large stock pot.
  2. Bring to boil and cook for 15-20 minutes.
  3. Add remaining ingredients, return to boil, reduce heat slightly and cook until all veggies are tender.
  4. Let cool and put up in individual 1 pint servings.
  5. NOTES: the 29 oz diced tomatoes = 2 cans. If you buy the diced tomatoes with basil, garlic & oregano, you can skip the spices listed above and substitute 1 Tbl Italian seasonings. If you use the plain diced tomatoes, use the seasonings as listed above. You can also substitute stewed tomatoes in place of the diced tomatoes, but you will have to dice them yourself.
