Ingredients:

  • 3 sprigs fresh basil
  • 3 sprigs fresh tarragon
  • 6 sprigs fresh thyme

Directions:

  1. Wash herbs; arrange in a sterilized wide mouthed jar. Bruise leaves and stems, using a wooden spoon. Pour hot vinegar over leaves in jar. Cover with a metal lid, and screw band tight. Let stand 10 days at room temperature; shake jar daily.
  2. Strain vinegar through 4 layers of cheesecloth into a decorative bottle; discard herbs. Seal with a cork or other airtight lid. Use mixed herb vinegar in sauces and salad dressings.
