  1. In a large collander, combine cabbage and 2 tsp. salt.place a plate over cabbage and weigh down withsome can goods. let stand for 60 minutes. stir togather sour crean,vinegar,sugar,remaining salt and enough evaporated milk to make a medium thick sauce, you don't want it to thick.
  2. Squeeze cabbage by hands full to remove extra liquid. add onion and carrots. stir in dressing and toss lightly to coat.keep refrigerated.
  3. Never knew that there was a Missouri cole slaw until ran across this recipe.
