Ingredients:

Directions:

  1. Brown ground beef, diced pepper and onion until done.
  2. Drain if necessary. Add cooked rice if using.
  3. Take 1/12 of beef mixture and put in center of 1 tortilla - fold left side over and roll up tortilla (don't bother closing either end).
  4. Place in greased 9 x 13 pan.
  5. Continue for other 11 tortillas (squish 'em in there, they'll fit!).
  6. Pour and spread the hottest salsa you can stand over the top of the tortillas.
  7. Top with cheese.
  8. Bake at 375 for 30 minutes.
  9. Serve with additional salsa and sour cream.
  10. Even better the 2nd day!
