Melon with Minted Lime Dip

Ingredients:

  • 1/4 cup sugar
  • 1/4 cup water
  • 6 tbsp lime juice
  • 2 tbsp minced fresh gingerroot
  • minted lime dip:
  • 1 cup (8 oz) sour cream
  • 2 tbsp sugar
  • 1 tbsp lime juice

Directions:

  1. In a large bowl, combine the sugar, water, lime juice, mint, lime peel and ginger. Add melon balls. Cover and refrigerate for 1-6 hours.
  2. Thread melon onto wooden skewers or toothpicks. In a small bowl, combine dip ingredients. Serve with melon. Yield: 8 cups fruit (1 cup dip).
