Ingredients:

  1. Mix eggs, milk, 1 cup of the breadcrumbs, sausage, and beef in large bowl until thoroughly combined. Be careful not to knead too hard or for too long.
  2. Using your hands, form 2 diameter balls from mixture. Again, try not to pack too tightly: meatball should be soft.
  3. Put remaining breadcrumbs on a plate or prep pan, and roll meatballs in breadcrumbs until evenly coated.
  4. Heat olive oil in metal pan on medium to medium high. Once oil is hot, add meatballs, in batches, to the pan, browning each side thoroughly. Meatballs should not spend more than a few minutes in the pan. Do not worry about heating all the way through. Due to the flat pan, the meatballs may take on flat edges, but this is fine.
  5. Put browned meatballs in some sort of baking pan or baking sheat and cook at 375°F for about ten minutes.
