Ingredients:

  • 2.5 # potatoes , 1.5' chunked
  • 3cup leziel''s million dollar chicken drippings or
  • 3cup angelgal's melt-in-your-mouth short ribs drippings or
  • 3cup mamajune's crockpot garlic brown sugar chicken drippings

Directions:

  1. That’s right! You’ve to make Leziel’s Million Dollar Chicken to get drippings in order to make these potatoes. If you’ve made the MDC correctly, you will have 3 cups of drippings. If not, then add water to compensate.
  2. Rest the chunked potatoes in water until ready to use to keep them from turning brown.
  3. Add 2 tablespoons olive oil to a dutch oven over a medium heat. Add onion and sauté for 5 minutes. Add garlic and sauté for 30 seconds or until fragrant. Remove onion/garlic saute and set aside.
  4. Add 2 tablespoons olive oil to the dutch oven; increase heat to medium-high. Drain potatoes, add to dutch oven; stir to coat. Stir potatoes every 2 minutes. We are browning the potatoes for some color and texture. Sort of like searing meat to hold in the juices. The browning process should take about 15 minutes, stirring every 2 minutes.
  5. When the potatoes start to break-up around the edges from the stirring, it is time to add the onion sauté back into the potatoes and the 3 cups Chicken drippings. Stir, bring to a boil, reduce heat to simmer and cover.
  6. Simmer for 45 minutes or until potatoes are fork tender stirring once or twice to keep from sticking and the fluid is reduced to very thick gravy.

  9. Make Angelgal's crock pot Melt In Your Mouth Short Ribs recipe and enjoy them. Decant off the meat squeezings. Chill overnight and remove the fat that has coagulated on the surface. Should be about 3 cups of juice left. Add make-up water for any difference.
  10. Add 8 oz. whole baby bella mushrooms; halved, to the onions after the onions start to soften. Use the meat squeezings to boil the potatoes per the original recipe instructions.

  12. I'm thinking about changing the recipe name to just country potatoes because I have a feeling that there are going to be several more flavors of drippings that I will try.

  15. MakeCrockpot Garlic Brown Sugar Chicken Recipe by Mamajune and save the crockpot liquid. Use the crockpot liquid for the simmering sauce for the potatoes.
  16. Don't need anything else except the potatoes and crockpot liquid. And you don't even have to braise the potatoes if you don't want to.
  17. Stir into potatoes, one tablespoon cornstarch mixed with one tablespoon water to help thicken the liquid, if necessary.
