Ingredients:

  • 2 tbsp butter
  • 1 pinch nutmeg
  • 1 dash salt and pepper

Directions:

  1. Heat oven to 400 degrees F and line a baking sheet with foil.
  2. Cut the top and bottom off the squash. Cut into quarters. Put the pieces skin side up and bake for about 45 minutes.
  3. Let the squash sit until it is cool enough to handle and scoop and the seeds. Scoop out the flesh into a bowl and add the butter and nutmeg. Mash with a potato masher and add salt and pepper to taste.
