Ingredients:

Directions:

  1. Wash, do not peel, small new red potatos and place in pan with fat free chicken broth seasoned with minced garlic. Bring to boil and simmer until almost tender. Add spinach and cook until tender. Spinach will cook down almost immediately. drain most of broth off (save and freeze if you wish). Mash potatos and spinach mixture and add sour cream and salt and pepper to taste. Delicious!
