Mary's Zucchini Scones

Ingredients:

  • 2 1/4 cups flour
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp lemon peel
  • 1/4 cup butter
  • 1 egg
  • 1/3 cup milk

Directions:

  1. Mix flour, baking powder, salt, sugar, cinnamon and grated zucchini.
  2. Peels together.
  3. Cut in the butter until it resembles coarse.
  4. Cornmeal.
  5. Mix the egg with milk. Add to flour mixture with.
  6. The grated zucchini.
  7. Stir until a soft dough forms.
  8. Turn on to a lightly floured board .
  9. Roll into a ball.
  10. Cut in half and pat each half into a 6-7 inch round. Dip.
  11. A knife into flour and cut each round into 5 wedges.
  12. Place on a cookie sheet sprayed with cooking spray. Bake 15 minutes at 425 degrees. Makes 12 scones.
