Mary's Split Pea Soup

Ingredients:

  • 1 package split peas
  • 1 -2 large potato
  • 1 ham
  • ham bone (ham hock or shank)
  • salt and pepper

Directions:

  1. Rinse and soak peas overnight in cold water.
  2. Pour off water+ place in large pot-cover with fresh water.
  3. Add chopped onion, uncooked ham shank/hock, and bay leaves.
  4. Bring to boil and cook until meat falls off bone-pull meat out.
  5. Remove fat and discard bones; replace meat in pot.
  6. Cut up carrots+ potatoes; cook until tender (~1hour).
  7. Add to soup.
  8. Remove bay leaves and serve.
