Marvelous Mushroom Dressing

  1. Preheat oven to 300 degrees.
  2. Cut bread into slices and cube. Spread bread out on baking sheets in single layers and bake in oven for 30 minutes. Remove and allow to cool completely.
  3. Increase oven temperature to 400 degrees.
  4. Butter shallow, 2 quart baking dish.
  5. Melt butter in large skillet over medium heat; add celery, onions, salt and pepper, and cook until just beginning to brown, about 15 minutes.
  6. Add mushrooms to skillet. Cook, stirring occasionally, until liquid has evaporated and mushrooms are tender, about 10 minutes. Transfer to large mixing bowl and allow to cool.
  7. Add bread cubes to bowl and toss with mushroom mixture. Gently stir in broth and water. Season dressing to taste with salt and pepper. Add eggs and gently combine.
  8. Spoon dressing into buttered baking dish. Cover with foil and bake for 25 minutes. Remove foil and bake additional 25 minutes.
  9. Serve warm.
