Marinated and Crumbed Pork Schnitzel

Ingredients:

Directions:

  1. Mix together the soy sauce, lemon juice and garlic in a shallow dish.
  2. Add meat to dish.
  3. Marinate for at least 1 hour if possible; make sure all sides are coated.
  4. Whisk the egg and milk together.
  5. Spread out the breadcrumbs in a shallow dish or tray.
  6. When ready to cook, dip meat slices in the egg mixture, shaking off the excess before laying the slices in the breadcrumbs.
  7. Coat each side well with the crumbs.
  8. Lay out on another plate/tray and put in refrigerator for approximately 20 minutes to help set the breadcrumbs.
  9. To Cook:.
  10. Use enough oil to coat bottom of large frypan.
  11. Heat until almost smoking.
  12. Fry schnitzel quickly on both sides. You may have to fry in batches depending on the size of the pan.
  13. Drain on paper towels.
  14. Serve with a wedge of lemon to squeeze over top if desired.
