Ingredients:

  • 2 large ripe mangoes
  • 1 large cucumber
  • 2 to 3 tsp lime juice
  • 1 to 2 level tsp freshly grated green ginger (or more to taste)

Directions:

  1. Slice cheeks from mangoes, skin and slice flesh into strips. Skin and remove seeds from cucumber (I leave seeds in), slice and mix with mango. Shake remaining ingredients together, pour over salad and serve.
