Low-fat Orange Poppy Seed Bread

Ingredients:

  • 1 3/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup poppy seeds
  • 3 tbsp butter
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 cup evaporaed skim milk
  • 2 tbsp orange juice
  • 1 tsp orange zest

Directions:

  1. In large bowl combine flour, baking powder, soda, salt and poppy seeds. Set aside
  2. In mixer bowl cream butter and sugar, beat in eggs, milk, orange juice and zest
  3. Add liquid ingredients to dry, and combine until just moistened.
  4. Spread into greased and floured 8 1/2 x 4 1/2 inch loaf pan
  5. Bake in preheated 325 degree oven for 40 to 50 minutes, or until wooden pick inserted in c enter comes out clean.
  6. Cool 5 to 10 minutes then remove from pan
  7. Continue to cool on wire rack.
