Ginger Orange Muffins

Ingredients:

  • 1 3/4 cups flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 medium orange
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup orange juice

Directions:

  1. Preheat oven to 375 degrees.
  2. Combine flour, baking powder, soda, and salt.
  3. Finely grate zest from orange to make 2 tsp.
  4. Peel orange, discarding rind and white pith.
  5. Finely chop orange, removing seeds; set aside.
  6. With electric mixer, beat butter and sugar until light and fluffy.
  7. Beat in egg.
  8. Stir in reserved orange and zest.
  9. Beat in reserved flour mixture alternately with orange juice, ending with flour.
  10. Fold in ginger.
  11. Divide batter among muffin tin, filling almost to the top.
  12. Bake 18-20 min.
  13. Or until pick inserted in center comes out clean.
  14. Remove from pan; cool on wire rack.
  15. You can add 1/2 cup of raisins to the mix too for a variation.
