Low-Fat Cashew Chicken (Oriental Dish)

Ingredients:

Directions:

  1. Toss chicken and ginger together in a med. bowl.
  2. Heat wok or large skillet over med-high heat. Add oil and heat until oil is hot.
  3. Add chicken and stir-fry 2 minutes.
  4. Add red pepper and continue to cook and stir 4 more minutes.
  5. Whisk cornstarch into teriyaki sauce.
  6. Add to meat mixture, and cook and stir until thick and bubbly.
  7. Stir in cashews and cook just to heat through.
  8. Serve with white rice.
