Ingredients:

  • 1/2 cup of white flour
  • 1/2 tsp of yeast
  • 1/2 tsp of salt
  • 2 tbsp of olive oil
  • 1 cup of chopped tomatos
  • 1/2 onion
  • 3 tbsp of rosemary
  • 4 cloves of garlic
  • 1/2 cups of spinach, raw
  • 1/4 cup of grated cheese

Directions:

  1. There is a lot of prep-cooking, though it does not take much time or effort.
  2. To start, pull 4 cloves of garlic away from bunch (skins left on).
  3. Slice the bottom off your chunk of cloves (the part where they join and begin to form roots, or would have formed roots).
  4. Place in roasting dish (still as a whole chunk) and drizzle with 1 teaspoon of olive oil and about 2 tablespoon of rosemary leaves poked in and around it.
  5. Roast until the skin goes golden and the cloves go soft.
  6. Sauce: You can use fresh tomatoes or canned (i actually used 1/4 can of crushed tomatoes).
  7. Sautee onion in 1 tablespoon of olive oil until tender.
  8. Add tomatoes, 1 tablespoon of rosemary (or any pizza-ish herbs you have!) and some salt if desired.
  9. Once garlic is cooked, the cloves should be easy to remove from their crunchy skins.
  10. Crush cloves with the flat side of a knife, roughly.
  11. Add to sauce with a little bit of water (it will simmer down).
  12. Sauce is done.
  13. Pizza base: 1/2 teaspoon of yeast with a little warm water, once risen add to 1/4 cup of flour and combine (will be moist).
  14. Use extra 1/4 cup of flour to bring it to a useable form.
  15. Roll out thin and place in the roasting dish you roasting the garlic.
  16. There should be oil left over from the garlic, but add an extra teaspoon to be safe.
  17. (I had no trouble getting it out).
  18. Apply sauce, 1/2 cup of spinach and cheese and some extra herbs if desired.
  19. Place in hot oven and remove after 15 or so minutes, once cheese and the pizza base is cooked.
  20. Base is thin, so don't worry, it cooks really fast.
