Little Dommy's Rice Pudding

Ingredients:

  • 2 cups cooked rice
  • 6 eggs
  • 1 cup sugar
  • 3/4 tsp lemon extract
  • 3 cups milk
  • 3/4 cup raisins

Directions:

  1. Combine milk and sugar.
  2. Scald mixture and remove from heat.
  3. Beat eggs.
  4. Add rice, raisins and extracts.
  5. Stir in milk/sugar mixture.
  6. Bake 40 minutes in a 350 degree oven.
  7. Remove from oven and stir.
  8. Top with slices of butter.
  9. Sprinkle with cinnamon sugar.
  10. Bake an additional 20 to 25 minutes.
