Linda's Baked Tilapia

Ingredients:

  • 16 oz tilapia fillets
  • 1/4 tsp olive oil
  • 1/4 cup lemon, sliced
  • 1/2 tsp pepper
  • 1/2 tsp thyme
  • 1/2 tsp oregano

Directions:

  1. Preheat oven to 400 degrees.
  2. Very lightly brush olive oil onto 4 pieces of parchment paper (one side only).
  3. Mix spices in a small bowl.
  4. Place one tilapia fillet in the center of parchment paper, top with mixed seasonings and a slice or two of lemon. Fold parchment paper to make a (mostly) airtight container. Repeat for each fillet.
  5. Bake on a cookie sheet for about 15 minutes, or until fish is flaky.
