Lentil Soup With Kielbasa

Ingredients:

Directions:

  1. Heat the oil in a 6 quart pot over medium heat.
  2. Add the onion, leeks, carrot, celery and garlic and saute until the vegetables are tender, about 6 minutes.
  3. Add the kielbasa and saute for 2 minutes.
  4. Add the tomatoes. Stir in the lentils and mix well.
  5. Add the broth and the thyme and stir.
  6. Bring to a boil over high heat.
  7. Cover and simmer over low heat for 50 minutes. Season with salt and pepper to taste.
