Ingredients:

  • 2 carrtos, peeled and sliced thin strips
  • 1 tbsp grated lemon rhind
  • 3 tbsp lemon juice
  • 2 medium yellow squash sliced thin strips
  • 1/8 tsp pepper
  • 1/4 tsp salt
  • 4 small new potatoes sliced thin strips
  • 1 zuchini sliced thin strips

Directions:

  1. Arrange sliced carrots and potatoes in veggie steamer. steam 8 minutes. add zucchini and squash and steam another 2 minutes or until crisp but tender.
  2. Meanwhile combine butter, lemon rind and juice, salt and pepper in sauce pan.
  3. Put veggies in serving dish and pour sauce evenly over veggies. toss gently.
