Ingredients:
2 carrtos, peeled and sliced thin strips
1 tablespoon(s) grated lemon rhind
3 tablespoon(s) lemon juice
2 medium yellow squash sliced thin strips
1/3 cup(s) melted butter or margarine
1/8 teaspoon(s) pepper
1/4 teaspoon(s) salt
4 small new potatoes sliced thin strips
1 zuchini sliced thin strips
Directions:
1. arrange sliced carrots and potatoes in veggie steamer. steam 8 minutes. add zucchini and squash and steam another 2 minutes or until crisp but tender.
2. meanwhile combine butter, lemon rind and juice, salt and pepper in sauce pan.
3. put veggies in serving dish and pour sauce evenly over veggies. toss gently.
