Ingredients:

Directions:

  1. Season the chicken with salt and pepper.
  2. Mix together the garlic, lemon zest and juice, chili, honey and ground coriander. Turn the chicken in the marinade to coat and leave to marinate in a covered non-metallic dish for 2-3 hours or overnight in the fridge.
  3. Preheat the oven to 400°F Roast the chicken in the marinade for 35-40 minutes until the chicken is tender.
  4. Place the chicken breasts onto warmed serving plates and garnish wih sprigs of cilantro.
