Ingredients:

  • bottom layer
  • 1/2 cup sugar
  • 3/4 cup flour
  • 1/2 cup coconut
  • filling
  • 1/4 cup lemon juice
  • 1 cup sugar
  • 1/4 cup margarine

Directions:

  1. BOTTOM
  2. Mix all ingredients together and reserve 1 cup for the top. Press into a foil lined and greased 9x9 pan.
  3. Bake at 350 degrees for 15 minutes.
  4. FILLING
  5. Beat eggs in the top of a double boiler or heavy pot.
  6. Add remaining ingredients and stir and cook until thickened.
  7. Spread over crumbs in pan and sprinkle reserved crumbs over top.
  8. Return to oven until browned, about 20 minutes.
  9. Cool on wire rack.
  10. Remove from pan lifting with foil and cut into squares.
  11. Enjoy!
