Layered Black Bean Lime And Sour Cream Dip

Ingredients:

Directions:

  1. Finely chop the tomatoes. Finely grate peel from limes, set aside. Drain beans, rinse. Place the beans, garlic and chipotle in a food processor; squeeze in 1T juice from 1 lime. Whirl until beans are pureed, add 1-2T of water if puree is too thick. Scrape into a large wide shallow serving bowl.
  2. Place sour cream in a small bowl. Squeeze in 2T lime juice; stir in coriander and lime peel. Spread over bean puree. (If making ahead, cover and refrigerate overnight.
  3. To serve bring to room temp. and scatter with the chopped tomatoes, then grated cheddar and then the chopped green onions.
  4. Perfect with tortilla chips or pita chips
