Joyful Soyful Oat And Semolina Bred

Ingredients:

  • 3/4 cup rolled oats
  • 1 tbsp oil
  • 1 tbsp honey
  • 1 cup lukewarm water
  • 1 packet (7g or 1 tbsp) dry yeast
  • 1 tsp sugar
  • 1 3/4 cups wholemeal flour
  • 1 1/2 cups white flour
  • 1 cup soy flour
  • 1 cup semolina
  • 2 tsp salt

Directions:

  1. Combine the boiling water with the oats, oil and honey. Let stand 10 minutes, until its cooled to atleast lukewarm.
  2. In another bowl, Combine the lukewarm water, yeast and honey. Let stand 10 minutes, until frothy.
  3. In a large bowl, combine all the remaining ingredients.
  4. Stir in the oat mixture and the yeast mixture to the flour mixture.
  5. Knead on a floured surface for like 10 minutes.
  6. Shape into a ball and place in an oiled bowl, turning to coat the dough with oil also.
  7. Cover the bowl wth plastic wrap or a plastic bag and leave to rise for about an hour, until doubled in size.
  8. Punch down dough, shape into a loaf, place in lined tin, cover and leave to rise for another 20 minutes.
  9. Spray the top with water and sprinkle on some extra rolled oats if you want. OR you know what would've worked better, if you rolled the whole dough in oats after punching it down, just before placing it in the loaf tin..... yeah, my sprinkled oats pretty much all came off. : (
  10. Bake at 220C (425F) for 30-35 minutes.
