Joce's Mushroom Broccoli Soup

Ingredients:

Directions:

  1. Sauté onions and a little garlic in a pan with a teaspoon of butter.
  2. Steam broccoli and reserve to the side, chopped into small florettes.
  3. Sauté mushrooms until tender, add broccoli.
  4. Mix skim milk with flour. Whisk until well blended. Add this to mushroom mixture and heat on low until thickens.
  5. Add chicken bouillon or broth to mixture for flavour.
  6. Salt and pepper (season) to taste.
  7. Blend in food processor or blender until pureed. Serve re-heated.
