Ingredients:

  1. Directions
  2. Chop all vegetable finely
  3. Saute the vegetables with a bit of butter or nonstick cooking spray
  4. Put all the ingredients into a large bowl and mix completely
  5. Form into 6-12 round balls and place each inside an oiled muffin tin.
  6. Put your favorite low sugar, low cal, or low fat sauce on top. I like cranberry sauce or onion jelly. Jalapeno jelly works nicely too but be careful not to put too much on.
  7. Put the muffin tin on a baking sheet and place in a preheated 350 degree oven
  8. Bake for 1/2 hours or until a knife inserted in the center comes out clean. Do not overcook the meatloaf.
  9. Remove from the oven and cool on a rack
  10. Unmold onto plates and serve with mashed garlic cauliflower (it tastes like mashed potatoes) and homemade vegan mushroom gravy.
  11. These can be put into quart sized freezer bags and frozen for later use.
