Ingredients:

  • 2 tbsp. olive oil
  • 1 cups salsa
  • 4 eggs
  • 2 small tortillas
  • 1/2 cup cheddar
  • sour cream (optional)

Directions:

  1. Heat olive oil in skillet
  2. Add salsa and bring to a simmer
  3. Add eggs poach until desired hardness
  4. Meanwhile toast tortillas in a skillet (or microwave w/ cheese)
  5. Sprinkle with cheese and melt
  6. Place poached eggs with remaining salsa on totillas
  7. Top with sliced avocado and sour cream
