  1. Set aside 1/2 cup cheese.
  2. Mix everything else together.
  3. Place most of the mixture in tortillas.
  4. Put the rest of it on top of the enchilladas.
  5. Put remaining cheese on top.
  6. Bake at 375 for 30 min or until bubbly.
