Jannid's Green Beans with Tomato and Onion

Ingredients:

  • 1 1/2 lb green beans
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 3/4 cup water
  • 1/4 tsp black pepper

Directions:

  1. Steam the trimmed beans til crisp tender - about 5-6 minutes. Refresh under cold water and pat dry.
  2. In a large skillet, add olive oil over med high heat; add salt then sliced onion; reduce heat to medium or med low.
  3. Gently saute til onion is rich golden brown - stir periodically to prevent scorching.
  4. Add tomato paste, brown sugar, and water; stir well. Increase heat to med-high; add green beans and if you like, fresh cracked pepper and more salt.
