Jane's Blueberry Cobbler

Ingredients:

  • 3 cups blueberries
  • 1 tbsp cornstarch
  • 1 cup water
  • 1 cup flour
  • 1 tbsp white flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 tbsp shortening
  • 1/2 cup milk

Directions:

  1. FRUIT MIXTURE: Put ingredients in medium saucepan. Bring to a boil and boil for 4 minutes. Put in 1 1/2 quart casserole dish.
  2. DUMPLING MIXTURE: Mix together flour, white sugar, baking powder, salt. Blend in shortening. Slowly add milk. Do not over mix.
  3. Drop by spoonfuls over the berry mixture. Bake 20 minutes at 400°F.
