Ingredients:

  • 2 cups sugar
  • 1 1/4 cups oil
  • 3 eggs
  • 2 tsp vanilla
  • 2 1/4 cups flour
  • 2 tsp cinnamon
  • 1 tsp salt
  • 2 cups coconut

Directions:

  1. Preheat oven to 350.
  2. Grease and flour 9x13 pan.
  3. Combine sugar, eggs, oil ,and vanilla in bowl.
  4. Blend using a spoon.
  5. Stir in dry ingregients.
  6. Mix well.
  7. Add carrots, pineapple,coconut and nuts.
  8. Pour into pan Bake until center comes out clean, around 50 minutes.
  9. Ice if desired.
