Ingredients:

Directions:

  1. Braise chicken breast, add to large pot. Saute onion and add it as well.
  2. Remove seeds and membranes from roasted chili peppers, puree in blender along with tomatillos.
  3. Add pureed peppers, tomatillos to pot, along with all remaining ingredients, give it a good stir, let it come to a gentle boil, then reduce heat and simmer at least 2 hours.
  4. Of course this can be done in a crock pot and left to simmer all day! A favorite crock-pot variation is to use a small lean roast in place of the cubed meat and let it go 'til it just plain falls apart. Yum.
