Ingredients:

Directions:

  1. Heat oven to 350 degrees.
  2. Cut pumpkin into quarters, remove seeds and fibers. Cut the flesh from the rind and then dice the flesh.
  3. Place in an ovenproof casserole, add garlic and toss with olive oil.
  4. Bake, turning pumpkin mixture with a spatula occasionally until pumpkin meat is soft and golden, about 30-45 minutes. Let cool.
  5. I serve the salsa in a hollowed out pumpkin. Remove the garlic cloves from the pumpkin mixture. Add the rest of the ingredients, stirring well and let chill at least 1 hour. Serve with tortilla chips.
