Irish Soda Bread

Ingredients:

  • 1 cup cake flour
  • 2 tbsp sugar
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp salt
  • 1 1/2 tsp cream of tartar
  • 1 1/2 cup butter milk
  • (if you don'tsp have buttermilk on hand, mix 1 1/2 tbsp lemon juice with 1 1/2 cup regular milk and let sit for 10 minutes)
  • 1 cup raisins (optional)

Directions:

  1. Preheat oven to 400 degrees.
  2. Line cookie sheet with parchment paper.
  3. Lightly flour a large smooth surface for kneading.
  4. Whisk together dry ingredients in large bowl.
  5. Combine in butter until mixture looks crumbly.
  6. Make a well in the dry ingredients. Pour in butter milk and mix just until ingredients clump together.
  7. Place dough onto prepared surface and lightly knead until dough is cohesive and clumpy. (DO NOT knead until smooth. Bread will be tough.)
  8. (Optional) Press dough into flat circle and sprinkle raisins on top. Press into dough. Fold dough into thirds and press flat. Fold into thirds the other way.
  9. Form into ball and place on prepared cookie sheet.
  10. Flatten dough ball into a disc 6in round and 2in tall.
  11. Bake in oven for 40 minutes, rotating halfway through.
  12. Let bread cool on wire rack.
  13. Serve brushed with melted butter.
