Irish Bread Pudding With Whiskey Sauce

Ingredients:

  • 1/2 cup raisins
  • 1/2 cup irish whiskey
  • 5 eggs
  • 2 cups heavy cream
  • 1 cup sugar
  • 1/2 tsp vanilla
  • 1/4 tsp nutmeg
  • 8 to 9 slices firm white bread
  • 1 stick butter
  • 1 cup sugar
  • 6 tbsp heavy cream
  • 1/4 cup irish whiskey

Directions:

  1. Pudding:
  2. Soak raisins in whiskey for 1 hour.
  3. Butter a 9 inch non metal baking dish. In bowl blend: eggs, cream, sugar, vanilla and spices.
  4. Butter one side of bread with softened butter.
  5. Cut slices diagonally. Arrange 1/2 bread in dish overlapping pieces.
  6. Drains raisins and sprinkle 1/2 over bread.
  7. Repeat with remaining bread and raisins.
  8. Pour over custard and soak for 30 minutes.
  9. Then place dish in a water bath and bake 400F for an hour or top is golden and set.
  10. Remove dish from water bath and cool on rack.
  11. Make sauce:
  12. Melt butter in saucepan, whisk in sugar and cream and whiskey .
  13. Simmer low until sauce thickens.
  14. Pour sauce over individual pudding portions
