Indonesian Pork and Pumpkin Curry

Ingredients:

Directions:

  1. Heat wok or heavy frying pan until very hot.
  2. Add oil to hot pan, and swirl to coat pan and heat oil.
  3. Brown the pork in hot oil, remove and keep warm.
  4. Add onion and garlic to oil, reduce heat to low, and cook until soft.
  5. Add pumpkin, ginger, fennel seeds, and lemon grass. Continue cooking for five minutes.
  6. Add curry paste, stir and cook until fragrant.
  7. Add pork and coconut milk to pan, bring to a boil, and simmer 10 minutes or until pork is cooked through.
  8. Stir in spinach, herbs, salt, pepper and lime juice.
  9. Serve with steamed rice.
