Indian Cucumber Salad

Ingredients:

  • 3 medium cucumbers
  • 1/4-1/2 tsp sugar , to taste
  • 1/2-1 tsp ground cumin , to taste
  • 1/2-1 tbsp chopped mint

Directions:

  1. Peel cucumbers; slice in half lengthwise and scoop out seeds. Dice the cucumbers and place in a bowl.
  2. Whisk together yogurt, lemon juice, sugar, cumin and mint.
  3. Pour over cucumbers and toss to coat.
