Imbolc Milk And Honey Rice Pudding

Ingredients:

Directions:

  1. In a mixing bowl combine eggs, milk, condensed milk, honey
  2. And vanilla.
  3. Beat gently by hand until honey is dissolved.
  4. Stir in rice.
  5. Pour into a 1.5 quart baking dish.
  6. Place the baking dish into a larger baking dish and put 1 inch of hot water into the outer dish.
  7. Bake for 45-60 minutes or until a knife inserted into the center comes
  8. Out clean.
  9. Remove immediately from the hot water bath.
  10. Set aside while you make the sauce.
  11. In a glass bowl mix equal parts condensed milk and honey.
  12. Heat in the microwave in 10 second intervals and stir until well
  13. Mixed.
  14. Stir in cinnamon to taste.
  15. Drizzle over individual servings of warm pudding.
