Ingredients:

  • 1/3 cup olive oil
  • 16 oz can of beets, drained
  • 1 cup hummus
  • 1 tbsp cumin
  • 1 tbsp lemon juice

Directions:

  1. Fry the onion in 1 Tbsp of oil until soft.
  2. Put all ingredients except the oil into a food processor and process until smooth.
  3. Transfer to a serving bowl and drizzle the remaining oil on the top.
