  1. Cut the potato into med size pieces place in a glass dish. chop onion in med size pieces, slice hot pepper into thin round slices. Cut bell pepper into chunks - put all these into glass pan. Place enough water in bottom of dish to make a thin layer so the potato will not stick. spinkle seasonings over potato and toss to coat. Note the crushed red pepper gets pretty hot so use a little at first until you find your degre of hotness. Place a clear wrap over top of glass dish and microwave for 20 min until potato is tender. Take out, toss to mix, spray top with pam. place in 350 degree oven for 20 mins or until it starts to brown.
